Legally, for a food to be considered “whole grain”, only 51 % of its ingredients need to be from whole grain sources. Legally a food can be labeled “whole grain” when up to 90% of the lipids and sterols have been removed during processing. Unprocessed wheat is nearly 10% fat (lipids and sterols) by weight.

True whole grains, eaten in their whole form or freshly ground into flour with nothing added and nothing removed, is very different nutritionally from the commercially produced “whole grain” products.
